The experience
You'll start in the home kitchen of Afaf and Ahmed in Amman, where you spend two hours learning to make dishes that have been passed down through Afaf's family. The menu changes with the season, but typically includes a salad or hummus, a main dish such as Maqlubeh (upside-down chicken and rice), Mansaf (spiced lamb with yogurt sauce), or Musakhan (sumac chicken with flatbread), and a dessert like Harissah (coconut cake) or toffee pudding. Afaf speaks limited English, so Ahmed is there to translate as she walks you through the ingredients and the step-by-step process of each dish.
If you choose the market tour option, Ahmed drives you to a local souk before the class to pick up fresh produce. The market is known for its vegetables and fruits, and you'll walk through stalls while vendors chat with you about what they're selling. This gives you a chance to see the ingredients in their original form before you cook with them. After the market, you head to the kitchen for the hands-on class.
Once the cooking is done, you sit down at the family table to eat the meal you've made, served with mint tea or Arabic coffee. Hotel pickup and drop-off from central Amman are included. Let the operator know your hotel name and address when you book. Afaf and Ahmed can prepare lactose-free, gluten-free, or vegetarian meals on request.
