A hands-on sushi and matcha class in Asakusa, Tokyo where you learn Tokyo-style nigiri and rolls from a chef, open a sake barrel with the traditional chant, whisk your own matcha, and leave with the owner's recipe. The class runs 90 minutes, welcomes children from age 4, and includes all-you-can-drink sake, a chef uniform, and meals made from what you prepare.

The Experience

The class starts with Kagami-biraki, a Japanese tradition where you and the group crack open a sake barrel together, chant "Yoisho, yoisho, yoisho!" and toast to new beginnings. A non-alcohol option is available if you prefer. From there, a Tokyo-trained chef walks you through the fundamentals of Edomae nigiri—how to shape the rice, handle the toppings, and place the fish so each piece holds together and tastes right. You'll make maki rolls too, using a bamboo mat to roll rice and fillings inside nori. No experience is required; the instruction is built for first-timers, and kids take to it naturally.

You'll create 6–10 pieces over the course of the class, tasting what you make as you go. The chef shares the owner's secret sushi recipe with participants only—something you can recreate at home once you leave. Toward the end, you whisk your own matcha by hand, working it into a smooth, foamy green tea that clears your palate after the sushi. The whole experience runs 90 minutes and includes the chef uniform, water or Japanese green tea, and all-you-can-drink sake throughout. If you have a food allergy or prefer no raw fish, let the operator know in advance and they'll work with you to adapt the class so everyone enjoys it together.
