Sushi Making Class in Kanda: 14-Piece Tasting with Chef
Step behind the counter and taste how rice preparation, ingredient quality, and technique change everything
A 2-hour sushi class at an authentic Edomae counter in Kanda where you taste a 14-piece omakase course, watch a professional chef demonstrate simmering, searing, marinating and wrapping, compare premium versus standard ingredients and wasabi, and step into the chef's workspace for photos. An English-speaking guide leads the session; families with children can book a kids' meal and dedicated seating instead.
The Experience
You arrive at a real sushi restaurant in Kanda and sit at the chef's counter. An English-speaking guide introduces the session and walks you through what's about to happen. The chef begins preparing the 14-piece course in front of you, and the learning starts immediately — not from a lecture, but from watching hands move, rice get shaped, and fish get cut. You're eating and learning at the same time, which is how this works.
The tasting moves through comparisons that make the invisible visible. You taste premium Hon Maguro tuna against standard cuts and notice the difference in your mouth, not in a description. You try sushi made with traditional Edomae technique next to non-Edomae versions. You grate real wasabi and taste it against the paste you've had before. The chef explains rice preparation and how it shifts flavor — something most people never think about until they taste it. You handle the specialized tools sushi chefs use and understand why each one matters. A hidden luxury fish from Japan appears on the counter, something you won't find everywhere.
Midway through or toward the end, you step behind the counter into the chef's workspace — the place where the work actually happens. You take photos there. It's the moment the experience shifts from watching to being inside it. The whole session runs about 2 hours, though it can stretch to 2.5 hours depending on the flow and the questions.

Can I bring my kids to the sushi class in Kanda?
Yes. Children up to 12 can book a kids' meal and sit in a dedicated Kids' Room or child-designated seat, not at the counter. If your child wants the full 14-piece sushi course at the counter alongside adults, book them under the adult plan instead. A Kids' Room is available but childcare services are not provided.
What exactly is Edomae sushi and why does it matter?
Edomae sushi is the traditional Tokyo style, built on specific techniques like simmering, searing, and marinating fish before it touches rice. The class compares Edomae-prepared sushi directly against non-Edomae versions so you taste the difference the technique makes. It's the foundation of authentic sushi culture.
Do I need to know how to make sushi before I book?
No. This is a tasting and learning experience, not a hands-on cooking class where you roll or prepare pieces yourself. You watch the chef demonstrate techniques, taste the results, and handle the tools — the focus is understanding how sushi is made, not making it yourself.
What if I have allergies or dietary restrictions?
The restaurant cannot accommodate allergies or dietary restrictions related to rice, soy, or seafood. Since sushi is built on all three, this experience is not suitable if you have restrictions in those areas.
Is there a guide, and what language do they speak?
Yes, an English-speaking guide leads the entire session and explains techniques, ingredients, and traditions throughout the 2-hour experience. They introduce you, seat you at the counter, and walk you through each tasting and comparison.
Can I order drinks during the class?
Drinks are not included, but you can order sake pairings or soft drinks after you arrive at the restaurant. The chef and guide will help you choose pairings that complement the sushi flavors.
