The experience
Borgo Pecoraio sits on a hillside in Tuscany, and the cooking happens right there on the property. Erminia teaches you to make a classic Tuscan crostino first (olive oil, salt, pepper on toasted bread) paired with house wine to set the tone. Then you move into antipasti: bruschetta al pomodoro and spinach crostini, the kind of warm welcome starters that open a real meal.
The core of the class is pasta. You make fresh tagliatelle and filled ravioli by hand, learning the dough and the technique Erminia has used for decades. She shows you how to build the tomato sauce and a rich pecorino fondue to go with them. Tiramisù comes last: the iconic Italian dessert that rounds out the menu. Each step is hands-on. You're not watching a demonstration.
When everything is ready, you move to the panoramic terrace and eat what you've made, still warm, with the view and the house wine. Bottled water, coffee and tea are included. The whole class runs three hours, and it's built as an alternative to a restaurant meal. You get the experience of cooking and the meal itself, without the price tag of dining out.
