The experience
What does it take to make real Italian pasta? The class starts with a 15-20 minute drive from Pisa or Lucca to a working farm set among olive groves, where you'll meet your host and begin with welcome drinks: local wine and refreshments. Then you get your hands into the dough. The chef demonstrates how to make pasta from scratch, but you're the one kneading and shaping it, with personalized guidance to make sure it turns out right. While the dough rests, you can walk through the olive farm and gardens.
Once the pasta is ready, you cook it and gather around the table to eat what you've made, served with the sauce of the day, local wine, and other Tuscan dishes. A local dessert finishes the meal. All the ingredients are fresh and seasonal, many grown on the farm itself. The whole experience is built around doing the work yourself in a relaxed, unhurried way: no performance, no crowd, just you and your host in a private setting.
