The experience
You start by walking into the olive groves themselves: terraced slopes with dry-stone walls that UNESCO protects as intangible cultural heritage. The farmer who owns the land walks you through the traditional cultivation methods that have shaped these hillsides for generations, explaining the varieties, the seasons, and why this particular corner of the Sienese countryside produces oil that tastes the way it does. It is not a lecture. It is a person showing you their work.
Then comes the tasting. You learn the official procedure (the tools, the temperature, the way to smell and taste side by side), and taste oils that range from everyday to rare. The producer shows you how to spot quality, how to read labels (and which ones mislead), and by the end you can distinguish a good oil from a mediocre one. You are not just drinking oil. You are learning to taste it the way a sommelier would.
Lunch arrives freshly prepared, built around what the farm grows: bruschetta with sweet garlic and oil, ribollita (the bean soup with kale and toasted bread), local cheese and cold cuts, and cantuccini cookies with Vin Santo wine. Everything comes from the 20 hectares around you, grown without pesticides or chemicals. You eat with both locals and other travelers, and a glass of wine comes with the meal.
