The experience
The class starts with a walk through the Vucciria, one of Palermo's oldest fresh food markets, where your local cook helps you pick seasonal ingredients for the dishes you'll make that morning. The market itself is part of the lesson: you'll see what's available, learn why certain items matter for Sicilian cooking, and understand how the region's food reflects centuries of Spanish, Greek and Arab influence. Once you've gathered everything, you head to the kitchen in a typical 18th-century home just steps away from the market.
You prepare four dishes together: a first course pasta, a main course of fish or meat with caponata, and typical Sicilian sweets. The recipes are the ones Palermo cooks have used for generations, built around fresh seasonal produce and traditional methods. As you cook, you taste local Sicilian wines and learn the stories behind each dish: why the flavors work, where the technique comes from, what makes this food distinctly Sicilian rather than Italian. The class stays small, capped at 15 people, so your guide can watch what you're doing and adjust the pace to your questions.
Lunch or dinner (depending on whether you book a morning or afternoon slot) is part of the class: you eat what you've cooked, with coffee or tea at the end. The guide speaks English, Spanish, Italian or French, and the kitchen and all areas of the home are wheelchair accessible. If you have dietary needs (vegetarian, allergies, preferences), let the operator know when you book and they'll adjust the menu.
