The experience
The class starts in a Palermo kitchen where you'll make cavatelli or busiate by hand, then move to filled ravioli with seasonal ingredients and fettuccine with Sicilian pesto. You work alongside the guide, learning the technique for each pasta shape and the sauces that go with them. The kitchen is set up so everyone has access to the equipment and ingredients they need. The guide walks you through each step in English or Italian.
Once the pasta is cooked, you sit together in the garden to taste what you've made. A welcome aperitif with local cheeses and salami arrives first, then the pasta dishes seasoned with their Sicilian sauces. Water, juice and coffee stay available throughout. The whole experience runs about three hours from start to finish.
