The Experience

You've just landed in Rome, or maybe you're halfway through your trip and have a free afternoon. Either way, you walk into a working pasta shop in the city — not a tourist kitchen, but the actual place where Angelo and his team make fresh pasta to sell. The smell hits you first, then the sight of flour dust on the counter, wooden boards stacked in the corner, and a long table set up for the class. This is where you spend the next few hours learning to make pasta the way Angelo's grandmother did, the way he still does it, and the way you'll be able to do it at home.

The class starts with handmade pasta using different flours — spelt, buckwheat, wholemeal — and moves into the shapes that take real technique: three types of ravioli, tortellini, and fettuccine. Angelo walks you through the safe way to cut, shows you how the dough should feel, and doesn't rush you. You're making actual food, not going through motions. Midway through, there's a tasting of Italian cheese with Prosecco and a special appetizer, which breaks up the work and lets your hands rest.
