The experience
The class happens at a Cesarina's home: part of Italy's network of 1000+ home cooks who open their kitchens to travelers. You'll have your own workstation with utensils and ingredients, and the host walks you through three authentic regional pasta recipes step by step. This isn't a demonstration you watch. You're the one rolling dough, filling ravioli, shaping agnolotti and cutting tajarin or tagliatelle by hand. The guide reveals the tricks that make each dish work, and you put your own hands to the test.
Once you've finished cooking, you sit down to taste everything you made, paired with a selection of local Piedmont wines: reds and whites chosen to match the dishes. Water and coffee come with the meal. The whole experience takes three hours. You pick either a morning or afternoon class when you book, and the guide conducts the lesson in English or Italian.
