The experience

What does it take to make fresh pasta the way they do in Pisa? You'll find out in a private class at a local home cook's kitchen, where you get your own workstation with all the tools and ingredients ready. The host (part of Cesarine, Italy's network of over 1,000 home cooks across the country) walks you through three authentic regional recipes: tortelloni, tagliatelle or ravioli, depending on the day. You're not watching a demonstration. You're making each dish yourself, learning the tricks that turn flour and eggs into something worth tasting.

After three hours of rolling, filling and shaping, you sit down to taste everything you've made, paired with a selection of local red and white wines. Water and coffee come with it. The class is offered in English or Italian, and the cook's home has all the sanitary essentials on hand. Public transportation runs nearby if you need it.
