Roll pasta by hand, make tiramisu, taste what you've cooked

A 3-hour hands-on pasta and tiramisu class in Pisa held in a local home with a Cesarina chef. You'll learn to roll sfoglia (fresh pasta) by hand, make two different pasta types from scratch, and prepare tiramisu. The class includes an Italian aperitivo with prosecco and nibbles, plus tastings of everything you make. Small groups stay under 12 people, and the guide speaks English or Italian.

The experience

You start with an Italian aperitivo (prosecco and nibbles) in your host's home, the way it's done in a typical Italian household. Then the Cesarina (the name for these home cooks who open their doors to travelers) walks you through rolling sfoglia, the fresh pasta sheet, by hand. You'll make two iconic pasta types from scratch, each one dressed with a simple sauce like pesto or tomato, then cook and taste them. The class wraps with tiramisu, the creamy layered coffee dessert built from the ground up.

This is a shared class, so you'll cook alongside up to 11 other people, all of you learning the same family recipes the Cesarina has cooked for years. The Cesarina hosts are trained to welcome you like family, not like customers in a kitchen theater. Everything you make (the pasta, the tiramisu, the flavors) stays with you to taste at the end of the class. Water, wine and coffee are included throughout.

The class runs three hours in a carefully selected local home in Pisa. Public transportation options are available nearby if you need them to get there.
