The experience
You arrive at a Cesarina's home in Siena and start with an Italian aperitivo (prosecco and nibbles) to settle in. Then the hands-on work begins: your host teaches you how to roll sfoglia, the fresh pasta sheet, by hand, and walks you through making two different pasta types (pici, tagliatelle or gnudi, depending on the day). Each step is shown and practiced. You're not watching a demonstration. The class stays under 12 people, so there's room to ask questions and move around the kitchen without crowding.
After the pasta, you move on to tiramisu: the iconic Italian dessert. Your Cesarina shares the family method, and you build it yourself. Everything you make gets tasted at the end, paired with water, wine and coffee. The whole class runs three hours, and you leave with the recipes and the memory of cooking in an Italian home rather than a commercial kitchen.
