The experience
You arrive at a Cesarina's home in Siena and spend the afternoon learning how to make two pasta dishes and tiramisu the way she makes them. This is hands-on: you're at her kitchen counter with the ingredients in front of you, not watching a demonstration. She walks you through the tricks (the way the dough should feel, how long to knead it, when the tiramisu layers are ready), and you do the work. The class lasts three hours, and the pace is unhurried. There's time to ask questions and to get the feel of each step before moving to the next.
When the cooking is done, you taste what you've made. The two pasta dishes and tiramisu come to the table with local wines, water and coffee. This is the meal itself, not a sample. You eat together, and the Cesarina shares stories about the recipes, the region and her own kitchen. The experience is private, so it's just you and whoever you've brought, and the host adjusts to your group's pace and interests. English and Italian are both spoken, so language is not a barrier.
The home is in Siena proper, and public transportation options are nearby if you need them. The Cesarina provides hand sanitizing supplies and maintains the sanitary standards she always has. Families with children of any age are welcome. Kids often take to the cooking part and remember it long after the trip.

What exactly do I learn to cook in this class?
You make two pasta recipes and tiramisu from scratch. Your Cesarina teaches you her family methods for each one, revealing the techniques that make them work: how to mix and knead the dough, how long to cook the pasta, how to layer and chill the tiramisu so it sets properly.
Do I eat what I cook, or is it just a tasting?
You eat a full meal. The two pasta dishes and tiramisu you've made come to the table with local wines, water and coffee, so you sit down and taste the fruit of your labour as an actual lunch or dinner, depending on which time slot you choose.
How many people can join this class?
