The experience
You arrive at a carefully selected home in Lecce where a Cesarina (a member of Italy's oldest network of home cooks) welcomes you like family. The class starts with an Italian aperitivo of prosecco and nibbles, then moves straight into the kitchen. Your host teaches you how to roll sfoglia (fresh pasta) by hand, the foundation for making two iconic pasta types from scratch. You work alongside other guests, all learning the same family cooking secrets that have been passed down in this home.
The second half of the class shifts to tiramisu. You'll layer, chill and finish the iconic dessert yourself, understanding why the technique matters as much as the ingredients. Everything you make (both pasta dishes and the tiramisu). You taste together at the end, paired with wine and coffee. The whole experience runs about three hours. Public transportation stops are nearby if you need them to reach the home.
