The Experience
You walk into a real cooking school in Florence and within minutes you're standing at a counter with flour on your hands and a group of strangers who are about to become your collaborators. The chef asks what you want to make — ravioli with pumpkin, tagliatelle with meat sauce, spaghetti with porcini mushrooms, whatever the seasonal ingredients suggest — and the group decides together. That's the whole thing right there. It's not a demo where you watch someone else cook. You're building the pasta from scratch: rolling dough, shaping it, filling it, saucing it. The class stays small, 10–12 people max, so there's real space to move and the chef actually sees what your hands are doing.
