Make Fresh Pasta & Tiramisu in Bologna: Learn From a Local
Turn an egg and flour into two kinds of pasta, by hand, the way Bologna has done it for generations.
A 3-hour cooking class in Bologna where you make fresh pasta and tiramisu from scratch, with lunch and wine tasting included. You'll learn to shape tortelloni and tagliatelle, prepare two sauces (ragù and fresh tomato), and finish with tiramisu made from a family recipe passed down over 80 years. The class opens with homemade pizza and aperitivo, then moves through the pasta-making process step by step, with wine education woven through the meal.
The Experience
How do you actually make pasta by hand? The class starts with that question answered: you'll work the dough yourself, learning the tricks your instructor picked up from her grandmother and the techniques that separate a real sheet of pasta from a rushed one. The morning opens with a bottle of wine and homemade pizza, then shifts to the counter where you'll shape tortelloni and tagliatelle, two of Bologna's signature forms. You're not watching a demonstration—you're doing the work, with guidance on how the dough should feel, how to roll it, and how to fill it so the edges hold.
Two sauces come next: ragù (the Bolognese sauce) and fresh cherry tomato with basil. You'll see how each one pairs with its pasta, and why the pairing matters. Between courses, a wine tasting moves through some of the best grapes from northeast Italy—pinot noir, pinot grey, cabernet franc, chardonnay—all from organic producers. The instructor walks you through the story behind each bottle and how to match wine to food, so the tasting is educational, not just drinking. Lunch is the pasta you made, dressed with the sauces you prepared.
Tiramisu closes the class. Your instructor uses her grandmother's recipe, one the family has made for more than 80 years, and you'll build it yourself so you can replicate it at home. The whole experience runs three hours, and you leave with the skills to surprise your family and friends with dishes that taste like you learned them in Italy—because you did.
