The experience
You arrive at a Cesarina's home in Bergamo: one of the network's carefully selected local hosts who opens her kitchen to teach you family cooking secrets. The class starts with an Italian aperitivo: prosecco and nibbles to settle in. Then you move to the counter and learn to roll 'sfoglia', the fresh pasta sheet, by hand. Your host walks you through the motion and the feel of the dough, showing you how to work it thin enough to see light through it.
From there you make two different pasta types: one filled, one fresh, each with its own technique and its own reason for existing in Italian cooking. You're not watching a demonstration. You're doing the work, your hands in the dough, learning the small adjustments that separate a sheet that tears from one that holds. Then comes tiramisu, the iconic dessert that ends almost every Italian meal. You layer the mascarpone, dip the ladyfingers, dust the cocoa, and by the time you're done you've made something that tastes like you've been cooking Italian food your whole life.
The class wraps with a tasting of everything you prepared, paired with wine and coffee. You leave with the recipes and the muscle memory of how to do this at home. The group stays under twelve people, so there's room to ask questions and to watch your host's hands close enough to learn from them.
