The experience
Ferdinando was born in Agerola, a small agricultural town on the Amalfi Coast, and has been teaching cooking for ten years. He grows the ingredients you'll use (tomatoes, vegetables, local cheeses) without pesticides in his organic garden, and the recipes come from his family's kitchen. The class starts with mozzarella: you'll learn the hand techniques that give it the right consistency, working with fresh curds until you have something you made yourself. Then you move to pasta, rolling and filling tagliatelle with the local cheeses and vegetable sauce you've just prepared. Last comes tiramisu, built in layers the way his grandmother made it.
After three hours of cooking, you step outside to the farm itself. The dishes you made (mozzarella with tomatoes and basil, the handmade noodles, the tiramisu) arrive at the table with wine grown on the property. This is when the work becomes a meal, and you taste what the ingredients and the technique actually produce when they come together.
