How do you taste wine where it's been made for thousands of years? Start at 9 AM when the driver picks you up from your hotel. The first stop is a local village bakery where you'll taste Shoti—Georgian traditional bread—alongside local cheese, then move into the working day: KTW Wine Factory, one of Kakheti's largest, combines traditional and modern methods to produce the region's celebrated wines. You'll taste a selection of their finest, learning how Kakheti's volcanic soil and continental climate shape what ends up in the glass.

From there, the route climbs to Bodbe Monastery, 2 km outside Sighnaghi. The complex sits on a mountainside overlooking the Alazani Valley and holds the tomb of Saint Nino, the 5th-century figure who brought Christianity to Georgia—a pilgrimage site where visitors often report their wishes coming true. The nuns who live there maintain the gardens as they have for centuries. You'll walk the grounds and feel the weight of the place before heading into Sighnaghi itself, the town that sits below.

Sighnaghi is small, built on a steep slope, and ringed by a fortress wall crowned with 27 watchtowers—one of the world's largest defensive walls, still mostly intact from the 17th century. Narrow cobbled streets and balconied houses line the squares, and locals call it the City of Love because couples can marry any time of day at the wedding house. You'll have time to walk, see the valley views from the wall, and taste Kakhetian wines—Saperavi, Kindzmarauli, Rkaciteli, Mtsvane—at cafes and restaurants throughout town. The Georgian bread-baking masterclass happens during the day, so you'll return to your hotel having made something with your own hands.
