The experience

The Dezerter's Bazaar is where Tbilisi's food culture lives. You start there with your guide, moving through the stalls to meet vendors and taste what they're selling: seasonal vegetables, cheeses, breads, the raw ingredients that define Georgian cooking. From the market, you head to a notable local restaurant for a sit-down meal of regional specialties: ghobi (a large bowl of seasonal starters with pkhali, jonjoli, cheese and corn bread), tonis lobiani (bean bread baked in a traditional tone oven), and tkemali (homemade spur plum sauce). It's the food people actually eat here, not a tourist version of it.

After dinner, you move to a wine bar for a guided tasting of Georgian wines. The guide walks you through the country's unique varieties: Georgia has been making wine for thousands of years and the styles are unlike anything you'll find elsewhere. The tasting is selective, not a marathon, and it sits naturally after the meal. The whole thing runs about five and a half hours from start to finish, which leaves room for the rest of your day in the city.

Private transportation is included, so you're not navigating between stops or waiting for a group to assemble. The guide is English-speaking and genuinely invested in sharing the food and wine. These are people who know the country through its culinary side and can answer questions beyond the itinerary.
