The Experience

The day starts with pickup from your hotel and a 30-minute drive to the farm, where a married couple of farmers greets you with a cup of coffee. Before you step into the fields, the guide walks you through how Colombian coffee tastes — the sour, bitter and sweet notes that shift with brewing method — so you know what to listen for when you taste the beans later. You'll plant seeds in the seedbed, learning the timeline for each stage as the seedlings grow into trees. Then you suit up: buckets, hats and rain boots go on, and the real work begins.

Picking comes first. The farmer shows you how to select only the ripe beans and shares what the job is actually like — the wages, the lifestyle, who does this work. At the end you weigh your load to see who picked the most. From there the beans move through depulping (skin removed, slimy layer separated), fermentation (the mucilage comes off), and drying in a tent called a Marquesina that speeds the process. You watch each step and handle the beans as they transform. Once they're completely dry, you use an artisanal threshing machine to remove the husk — this is the stage most Colombian coffee stops at before export, but the farm keeps going.

Roasting happens at 200 degrees Celsius, and you see the three levels: medium, medium-high and highly roasted. Then you grind the brown beans yourself and pack the fresh coffee you just processed. The farm sells bags at a good price if you want to take some home. A delicious homemade snack waits for you at the table as a reward for the work. The whole experience takes four to five hours, and by the end you've moved coffee through every stage of production with your hands.
