The Experience

Our guide met us outside the hotel at dusk, carrying a small notebook where she'd written down which stall was making fresh bánh xèo that night and which vendor had just opened his grilled pork stand. She knew the owners by name, and they waved her over like she was family. That's the difference between wandering Hoi An's night market alone and going with someone who actually eats there—you don't stand in front of a cart trying to guess what's inside the wrapper. You sit down, and someone hands you the thing that's worth eating.

The tour moves on foot through the ancient town first, when the lanterns are lit but the crowds have thinned out. You'll walk past the old wooden shophouses and down to the market, where the real work starts.
