The experience

You meet your guide at 626 Hai Ba Trung street and walk into the parts of Hoi An where locals eat. The route moves through the town hitting 10 stops: each one a stall, a vendor or a small shop where the guide orders for you and explains what you're tasting and why it matters to the town. You're not standing in front of a monument. You're standing in front of someone's lunch counter, and the guide is the person who knows the owner.

The food itself is the point: you taste the dishes Hoi An is known for, the ones that don't make it onto the hotel restaurant menus. Between stops the guide talks about the town's history and how the food connects to it: what the old town was, who lives there now, what the street you're walking on used to be. It's the kind of knowledge you only get from someone who lives there, not from a script.

Around the middle of the tour you sit down at a local restaurant with the group, order a proper meal, and have time to talk through what you've tasted so far. Water, coffee and tea come with the tour. The whole thing takes 4 hours, so you're back with time left in the afternoon.
