The Experience
The morning air at Hoi An’s market hits you right away—fresh herbs, a bit of fish, and that buzz of scooters weaving through narrow lanes. Our chef met us by the fruit stalls, grinning and already chatting with a vendor about today’s green beans. He showed us how to spot the best basil (hint: it’s all in the smell) and let us nibble on a slice of sweet pineapple from a lady who’s been selling here for decades. I never realized how much goes into picking just the right greens for pho or banh xeo until I watched him haggle over a bunch of coriander.
We hopped onto an electric car—no noisy engines, just the soft whirr as we rolled out to Tra Que village. The fields stretch out in neat rows, and you can see farmers bent over their gardens, hands deep in the soil. There’s this earthy scent everywhere, mixed with mint and morning dew. One farmer waved us over to try pulling up bean sprouts ourselves; it’s trickier than it looks! Back at the kitchen, we chopped and stirred under our chef’s watchful eye. Making rice paper rolls with herbs I’d picked myself felt oddly satisfying—and eating them was even better. Cold beer in hand, we swapped stories while tasting what we’d cooked. Simple food, but honestly? Some of the best flavors I’ve had in Vietnam.
