After picking out what we needed (I may have gone overboard on basil), we headed back to the kitchen—just six of us around battered wooden tables. The air was thick with coconut milk and something spicy simmering. We each picked three dishes; I went for Pad Thai, green curry, and spring rolls because I’m basic like that. Chopping garlic while someone else pounded curry paste felt almost meditative—except when I nearly dropped my knife from laughing at someone’s attempt to flip noodles. Our teacher watched us all closely but never hovered; she just nudged my pan off the heat at the right moment so nothing burned.
I didn’t expect to actually eat something that tasted like real Thai food by the end. But sitting down together at this long table, passing plates around—my hands still smelling of lime—it felt like more than just a class. Even the banana coconut milk dessert (which looked weirdly simple) turned out sweet and soothing after all that chili. Maybe it was just the company or maybe it was the fact that we’d picked every ingredient ourselves that morning.
