Make mojo three ways, taste it with wine

A 90-minute mojo sauce workshop at a Canary Islands winery where you make three types of sauce using traditional family recipes, then taste each one paired with a glass of young wine. The class includes a guided winery tour, runs in English or Spanish, and is open to ages 18 and up.

The Experience

You'll make coriander mojo, parsley mojo, and red mojo—three versions of the sauce that's one of Spain's seven gastronomic signatures. The chef walks you through each one using different ingredients and the family's traditional methods. While you're working, the winery serves three glasses of young wine: a Dragoblanco white paired with watercress butter; a Hollera red made by carbonic maceration, paired with almogrote; and a Monje Tradicional red paired with Canarian chorizo and wrinkled potatoes. You also get freshly baked bread with spreads, sliced cheese on toast, and bottled water.

The winery tour happens at set times—11:00 or 13:00—but the mojo workshop can run before or after, so you might make sauce at noon and tour at 1 p.m., or the other way around. A professional guide leads both parts in either English or Spanish, depending on what you choose when you book. The whole thing takes 90 to 120 minutes.

The winery is wheelchair accessible. If you have dietary needs—vegetarian, allergies, anything else—let them know at booking. Wear comfortable shoes and a coat.
