The chef shows you the technique and the reasoning behind each step, so you understand not just what to do but why the dish works the way it does.

The menu moves through Spanish staples and Mediterranean fusion. You start with the tortilla, the everyday potato-and-egg dish that shows up on Spanish tables at any hour. Then ceviche, where Mediterranean and Peruvian traditions meet. Chistorra — a Basque sausage — gets paired with cider in a pairing that carries centuries of history. The seafood paella is the showstopper, a 19th-century dish that became the icon of Spanish cooking.
