The experience
What makes this different from a commercial cooking school is that you're cooking in Chamsi's home, not a teaching kitchen. You start by meeting her at your hotel, then head to the local market where she shops for her own meals. She'll walk you through the produce stalls, the meat market, and the spice vendors: the real places where Casablancans buy ingredients. Once you've picked everything you need, you drive back to her home to start cooking.
In her open-space kitchen, you'll spend about an hour preparing an authentic Moroccan meal alongside Chamsi. You might make a lamb, beef or chicken tagine with seasonal vegetables, couscous, Moroccan salads, and a dessert like milk pastilla or oranges with cinnamon. Some prep work may happen in advance, but you'll be hands-on for the main cooking. When everything is ready, you sit down together to eat what you've made, with a glass of local wine. The whole experience, market to table, takes about five hours, and it ends with hotel drop-off.
Chamsi can prepare vegetarian meals, halal meat, or kosher meat if you request it at booking. Friday mornings are prayer day, so the market is quieter and some stalls close. Friday evening market tours aren't offered. If you have allergies or dietary restrictions, mention them when you reserve so she can plan the menu accordingly.

What do you actually cook in Chamsi's kitchen?
You prepare a tagine (lamb, beef or chicken with seasonal vegetables), couscous, Moroccan salads made with eggplant, tomatoes, onions and roasted peppers, and a traditional dessert such as milk pastilla or oranges with cinnamon. Some ingredients may be prepped in advance, but you'll be hands-on for the main cooking and plating.
Can you get a vegetarian meal or accommodate dietary restrictions?

How does the market visit work? Do you buy ingredients yourself?
You shop the market with Chamsi, visiting the produce stalls, meat vendors and spice merchants where she buys for her own cooking. You'll select fresh ingredients together for the meal you'll prepare later, and those purchases are included in the experience.
What time does the experience start and end?
You choose either a lunch or dinner departure when you book. Chamsi picks you up from your hotel and returns you there at the end. The whole experience runs about five hours from pickup to drop-off.
