The experience
You arrive at Chamsi's home in Casablanca and step into her open-space kitchen to cook together. The menu shifts with what's in season. You might prepare lamb tagine with seasonal vegetables, marinated grilled seafood, Moroccan lemon chicken with olives, couscous, roasted pepper salad or eggplant zaalouk alongside homemade bread. Some components are prepped in advance, but you'll have your hands in the work for about an hour, learning the spice combinations and techniques that define everyday Moroccan cooking. Chamsi guides you through each dish, and the class is conducted in English, French or Arabic depending on what works for your group.
Once the cooking is done, you sit down together to eat. The meal concludes with a dessert like milk pastilla, oranges with cinnamon or Moroccan cakes, and you'll have a glass of local wine with the food. This is a private experience. It's just your group and Chamsi's family, not a classroom or a restaurant kitchen. If anyone in your party has allergies, dietary restrictions or cooking preferences, let the operator know at booking so Chamsi can adjust the menu.
