The experience
Two hours starts with cheese-based appetizers and a drink before you settle at the table. The instructor, who has spent over 20 years studying cheese in Canada, the US, France and Italy and now focuses on Mexican artisan cheeses, walks through the history of cheese in Mexico and the generations of French cheesemakers who established themselves there. You'll learn how cheese is made, the differences between commercial and artisan varieties, and the styles that matter when you're building a board.
The core of the class is the cheeseboard itself. You'll set up a large board with a dozen local artisan cheeses and pair them with condiments made in and around San Miguel de Allende: membrillo, cajeta de Celaya and orange blossom honey. As you move through each cheese, you'll taste it, learn about the makers and mongers behind it, and find out where to buy them here in Mexico. The instructor teaches the rules for pairing cheeses with different drinks, how to cut and serve them, and how to store them at home. Everything is sourced locally, from the cheeses to the herbs, flowers and honey on the board.
The class ends with a cheese-based dessert. The home where it's held sits above the city with a view of the pink marble Parroquia at the center.
