The Experience
We met at Fábrica la Aurora, which honestly is already a bit of a scene — artists everywhere, paint on their hands, someone playing guitar in the courtyard. Our van was waiting (air conditioning, thank god), and we rolled out past those sun-bleached walls into the countryside. The drive to the vineyard wasn’t long but it felt like we were slipping into another world — fields, wildflowers, the air getting that dry grapevine smell I always associate with late summer. Our guide, Luisa, started telling us about how wine in Mexico is older than I’d guessed (I probably looked surprised; she laughed and said most people do).
The hacienda itself has this faded grandeur — big arches, stone floors cool underfoot. We wandered through gardens where you could hear bees somewhere in the lavender. Luisa pointed out different grape varieties; I tried to remember their names but got distracted by a couple of kids chasing each other around a fountain. Inside the production area it was quieter, almost echoey, and there was this sharp tang of fermenting grapes that hit me as soon as we walked in. She explained how Guanajuato’s weather makes for these particular flavors — honestly I’m not sure I caught all the details but you could tell she cared.
In the cellar it was dim and chilly, barrels stacked like something out of an old movie. Then came what everyone was waiting for: we sat out at this viewpoint overlooking rows of vines and tasted three wines (the rosé was my favorite — don’t judge). They brought out a cheese board with meats and fruit; I still think about that salty cheese with a sip of red. Someone tried to pronounce “Syrah” properly and failed spectacularly; lots of laughter at our end of the table. The sun started dipping behind the hills and everything felt kind of golden and slow.
I didn’t expect to feel so relaxed or… well, welcome? Maybe it’s just something about San Miguel de Allende — people wave at you from passing trucks, nobody seems in a hurry. On the way back I watched dust swirl in the last light through the van window and thought about how wine really does taste different when you’ve seen where it comes from. Anyway, if you’re even half-curious about Mexican wine or just want an afternoon that doesn’t feel rushed or touristy, this day trip is worth it.
