The experience
The day starts with a shuttle from San Miguel de Allende to Tres Raíces, one of the region's award-winning vineyards in what Mexico calls the cradle of wine in America. Once there, a guide walks you through the fields (in spring and summer you'll smell the vines and grapes), then into the biggest wine cellar in the region, where you learn how the winery ages and produces its internationally recognized wines. The building itself (grandiose architecture, exquisite art, majestic views) is part of what you're seeing.
Then you sit down at Terruño Restaurant inside the winery. A five course menu runs beetroot salad with Sauvignon Blanc, foie gras ravioli with rosé, salmon with a red blend of Nebbiolo and Sangiovese, grilled fillet with Cabernet Franc and Merlot, and chocolate mousse with Pinot Noir. The three course option keeps the salad, fillet and mousse, each still paired. As each plate arrives, the staff explains the dish and why that wine works with it. You pour 4 oz. per glass and taste through the meal at your own pace.
After lunch, the winery is yours to wander: the shop, the chapel, the hotel grounds, whatever catches your eye. The whole experience runs about three and a half hours from pickup to drop-off.
