The Experience

The first thing I noticed was the smell—sort of sweet and earthy, almost smoky, even before we reached Mitla. We’d barely left Oaxaca when Alvaro handed us tiny glasses of mezcal for a toast in the van (I hesitated, but hey, when in Oaxaca). The drive to Teotitlán del Valle was all winding roads and flashes of cactus against those blue hills. I tried to pronounce “Teotitlán” right; Alvaro grinned but didn’t correct me. At the weaving workshop, the colors were wild—reds from cochineal bugs, blues from indigo—and I got red dye on my thumb. Still there when I write this.

Walking through the agave fields felt like stepping into some old story. The plants are huge up close—spiky and stubborn, with edges sharp enough to make you careful where you put your hands. Our guide (Alvaro again) told us about how each agave takes years to grow before it’s ready for mezcal. He pointed out which ones would be harvested next season. There was this dry heat and the sound of wind moving through the leaves—almost like rattling paper. It’s quieter than you’d think out there.

At his family’s distillery, the air changed—suddenly thick with that roasted agave smell. Their maestro mezcalero showed us how they crush the hearts with a stone wheel pulled by a horse (the horse looked bored but patient). Tasting mezcal straight from the still is nothing like what you get at home; it burned a little but then went soft, almost floral? Not sure if that makes sense. We tried at least seven kinds—one tasted faintly of smoke and pepper, another was almost sweet. Lunch came after: black mole chicken, tortillas warm from the comal, beans that tasted like someone actually cared about them.

I still think about that table—everyone laughing over mezcal, trading stories in broken Spanish and English while Alvaro’s mom kept refilling plates. There wasn’t any rush to leave; we just sat under faded papel picado banners until it was time to go back to Oaxaca city. On the ride home I realized my hands smelled faintly of agave sap and wood smoke—not sure if anyone else noticed.
