The experience
You arrive at Hotel Casa Ceiba at 3:30 PM ready to cook. The chef guides you step by step through three dishes that anchor Isthmian cuisine: crunchy seafood shrimp empanadas, tuna carnitas, and your choice of moles. The Oaxacan version layered with spice and complexity against the Puebla style. You work with fresh ingredients and the techniques locals have used for generations, learning not just the how but why each element matters. The class moves through sauces, Grenaches of the Isthmus, Cochinita Pibil, and handmade tortillas ground by hand, so you understand the full range of what the region cooks.
At 6:30 PM you sit down to taste everything you've prepared. Two drinks come with the class (a cocktail, beer or soft drink, your choice), and you eat in a relaxed, welcoming atmosphere. The chef shares the regional and cultural importance of each ingredient as you eat, so the meal becomes the final lesson. Vegetarian options are available if you need them, and the experience adapts to different diets without losing the authentic flavors.
