Picture this: you're standing in a bright kitchen near La Bocana beach in Huatulco, your hands dusted with corn flour, a native chef beside you showing how to fold an empanada so the filling doesn't spill. The class starts with a pickup from your hotel, then a short drive to Wahaca Cooking near the beach. Once you arrive, there's no sitting around watching — you're in it immediately. You'll chop, dice, cube, mix. Your guide is a native chef who knows the history behind every ingredient, not just the technique. You'll make corn dough empanadas stuffed with huitlacoche and squash, roast red and green salsas from scratch, and learn to hand-press tortillas until they're actually edible (this part takes practice, and the chef won't let you off easy).
