The experience
You'll work inside a working Nagoya ramen shop, not a classroom. A trained ramen chef walks you through the fundamentals of tonkotsu ramen-making while Yuka, your English-speaking host, keeps you on track. The focus is on the noodles themselves: learning to boil them until they reach exactly the right firmness is the core skill, because that texture is what defines Nagahama ramen. You'll see how the timing and the drain matter.
Once your noodles are ready, you pour them into the rich, piping hot tonkotsu broth that's been waiting. Then you choose your toppings and seasonings to finish the bowl. This is where you make it your own, and where most people pull out their phones to photograph it before eating. The whole sequence, from boiling water to finished bowl, takes about an hour. When you're done building it, you sit down and eat what you made.
You'll wear a uniform while you work. The class includes the bowl of ramen you've made. If you want to add side dishes like gyoza or fried chicken, you can order them separately at the shop. Public transportation stops are nearby if you're coming from elsewhere in Nagoya.
