Make five pieces of wagashi, then drink the tea ceremony matcha you whisk yourself

A three-hour class at a private home in Yokohama where you make five pieces of wagashi (Japanese sweets) from dough, then learn tea ceremony in a traditional tatami room while eating what you made. An English-speaking tea master demonstrates the charcoal procedure for heating water, teaches you the history and etiquette of the ceremony, and guides you through whisking your own matcha. You drink two cups of matcha, eat two pieces of wagashi during the class, and take home the remaining four pieces.

The experience

You arrive at a private home in Yokohama and spend the first hour and a half making wagashi. The tea master chooses which type you'll make based on the season: nerikiri, gyuhi (mochi), or manjyu, and walks you through shaping each piece from dough. You make five pieces total, plus one extra for the tea ceremony itself. The ingredients are provided. You just need to bring socks for the tatami room that comes next.

After the sweets are ready, you move into the traditional tatami room for the tea ceremony portion. The tea master demonstrates the charcoal procedure, adding charcoal to heat the water, a step that's rare even for Japanese people to see. You watch the full ceremony, then learn the history and etiquette from someone trained in the practice. You can ask questions about anything that comes up. Then you try whisking matcha yourself, using the wagashi you made to accompany it. You'll prepare and drink two cups this way, eating two of your sweets in the process.

The class wraps after about three hours total. You take home the four pieces of wagashi you didn't eat during the ceremony, and you leave having made something with your own hands and learned how both of these traditions actually work, not just watched them happen.

What’s included

  • All ingredients for making wagashi.
  • matcha (green tea) for the ceremony.
  • instruction from an English-speaking tea master.
  • the four pieces of wagashi you don't eat during the class to take home.
