The experience
The class starts in a serene tatami tea room where you choose how to spend the first hour: learn the basics of matcha preparation and taste it straight, try a creamy matcha latte if you prefer something milder, sketch manga using authentic tools with the host's guidance, or simply sit with Japanese sweets and tea while the room's quiet settles around you. This opening sets the pace: unhurried, rooted in how Japanese daily life actually moves.
Then the sliding doors open to the kitchen. You work alongside the host to make sushi rolls with fresh ingredients like salmon, learning the fold and the pressure of the rice, then move to gyoza: the handmade dumplings that fill Japanese home tables. You shape, fold, and pan-fry them, tasting the difference between what you made and what comes from a restaurant. Lunch is what you've cooked, plated and ready to eat.
The host speaks English throughout, so the instructions land clearly and you can ask about technique or the stories behind the dishes. You leave with photos from the tea room, the skills to make both dishes at home, and the particular quiet that comes from spending time in someone else's kitchen on purpose.
