The Experience

The first thing I noticed was the clatter of pans and that warm, floury smell drifting out into the street — honestly, you can’t miss it. Our chef, Marco, waved us in with dough-dusted hands and a grin that made me feel like I’d just come home for dinner. There were maybe a dozen of us, all strangers at first, but you could already hear little bursts of laughter as we tied on our aprons (mine was crooked the whole time).

Marco showed us how to stretch the pizza dough — not as easy as he made it look. He kept saying “più piano!” which I think means “gently,” but my crust still came out a bit lopsided. No one cared though. The best part was when he handed me a bowl of fresh basil and told me to “smell Rome.” It really did smell green and peppery, if that makes sense. While our pizzas baked, we learned to mix three different spritz cocktails. I tried saying “Limoncello Spritz” in Italian, which made Marco laugh so hard he almost dropped an orange.

Sipping my Hugo Spritz (minty, cold glass sweating in my hand), I chatted with a couple from Berlin about their favorite Roman ruins. Someone put on music — something old and Italian — and suddenly it felt less like a class and more like a party where everyone’s invited. When we finally sat down to eat together, passing slices around and comparing whose crust bubbled up best, I caught myself thinking how strange it is to feel so at ease with people you’ve just met. Maybe it was the spritz talking.

I still remember the sound of Marco’s voice echoing off those tiled walls as he called out “Salute!” for our last toast. Walking back toward the Colosseum after, belly full and cheeks warm from both food and company… well, Rome felt smaller somehow — or maybe just friendlier.

What’s included

Your evening includes hands-on instruction from a local expert chef near the Colosseum, all ingredients to make your own Roman-style pizza from scratch (with vegetarian choices), plus three signature spritz cocktails—Aperol Spritz, Limoncello Spritz, and Hugo Spritz—or alcohol-free alternatives if you prefer. There’s also a mixology demo woven in before everyone gathers around for dinner together at the end.
