The experience
The class runs three hours in a Cesarina's home in Foligno, where you work alongside your host to build the dishes from the ground up. You'll start with an Italian aperitivo (prosecco and nibbles), then move into the kitchen to learn how to roll 'sfoglia' (fresh pasta sheet) by hand, a technique that takes practice but becomes intuitive once you feel the dough respond. From there you'll shape two different pasta types: one filled, one fresh, each with its own method and purpose.
Tiramisu comes last, and it's simpler than the pasta but no less important to get right. Your Cesarina will walk you through the layering, the timing, the balance of coffee and cream. Throughout, you're tasting as you go (the pasta you've just rolled, the tiramisu you've just built), so you understand not just how to make these dishes but what they're supposed to taste like. Wine and coffee are included, and you leave with an official Le Cesarine apron.
Small groups max out at 12 people, which means you're not watching a demo from a distance. You're actually cooking, with your hands in the dough. The class draws people who want to cook, not just eat, and who don't mind learning in someone's home instead of a commercial kitchen. Public transportation is available nearby if you need it to get there.
