The experience

In Aosta, you'll cook in the home of a Cesarina: a member of Italy's oldest network of home cooks who open their kitchens to travelers. The class starts with an Italian-style aperitivo: prosecco and nibbles, the way it's done in a typical Italian home. Then you move to the kitchen and learn to roll 'sfoglia', fresh pasta dough, by hand, a skill that takes practice but sticks with you. Your host teaches you two different pasta types, each one filled or flavored according to the season, then dressed with a simple sauce like pesto or tomato.

After the pasta comes tiramisu, the creamy layered coffee dessert you'll build from scratch. You taste everything you make, and the class wraps around the food itself: no lecture, no standing back. Water, wine and coffee come throughout. The group stays small, no more than 12 people, so there's room to ask questions and move around the kitchen without crowding. Public transportation runs nearby if you need it to get there.
