The experience
The masseria sits in the Apulian countryside near Ostuni, surrounded by oak forest and set up to show you how mozzarella, burrata and other cheeses actually get made. You start by meeting the master cheesemaker, who walks you through every step of the traditional production process. The heart of it: the moment the curd gets stretched (filatura), is where Apulian cheesemaking tradition lives, and you watch it happen up close.
From there you move through the farm itself: the stable where cows, calves and pigs live; the vegetable garden; the milking area. Then into the dairy facility to see both the artisanal techniques and the modern technologies that produce the cheeses. The cheesemaker is there, and if the moment allows, you can try handling the stretched curd yourself, though the experience does not include making your own mozzarella from start to finish.
The tasting wraps it up. You sit down to fresh dairy products straight from the masseria (mozzarella, burrata, stracciatella, caciocavallo) alongside cured meats, focaccia, baked goods and traditional desserts, all accompanied by local wine and water. The whole thing takes about 90 minutes. Winter schedules (November through March) run fewer days per week to keep group sizes viable, so check availability before booking.
