The experience
Bocale sits on 10 hectares in Montefalco, with 6 devoted to vineyards and an annual production of 35,000 bottles. The winery converted to organic farming in 2020 and works without herbicides, using grassed rows between vines to cut erosion and mechanical work. In the cellar, only indigenous yeasts ferment the wine. No microfiltrations or stabilizations happen. The result is wine shaped by the land and the natural cycle, not chemicals.
You taste three wines during the session: Trebbiano Spoletino, Montefalco Rosso, and Montefalco Sagrantino. Each one arrives with bruschetta topped in the winery's own extra virgin olive oil. The guide tells the story of Bocale (how it started, what drives the daily work in the vineyard and cellar), and walks you through how each of the three wines is born in the soil and grows in the barrel. The tasting lasts 30 minutes.
