The experience
You start with a walk through the farmland at Masseria Cappella: past vegetable gardens, grazing animals, and the centuries-old church built into the compound. Then you move into the cheese factory to watch the daily work: fresh cow's milk curdling, stretching, and becoming mozzarella using both modern equipment and techniques that have stayed the same for generations. This is not a demonstration you watch from behind glass. You see the dairymen at work in the actual production space.
After the factory tour, you step into the mozzarella workshop. The dairymen hand you warm curds and walk you through the stretching and shaping that turns them into the soft white cheese. Your hands do the work. There is no shortcut to learning the feel of it. Then you move to the flour-dusted bakery of the masseria, where a pasta artisan teaches you to shape orecchiette and cavatelli by hand, using the same wooden tools and techniques passed down through families in Puglia. You leave with the pasta you made.
If you choose the food tasting option, the experience wraps with a spread of local cheeses, cured meats, pickled vegetables, and a glass of house wine: red, white, or rosé. Water and soft drinks are also included. The base option (tour and workshops only) does not include this tasting, so you decide at checkout whether to add it.
