The Experience
The vineyard walk comes first. Your host talks through the history of the Itria Valley, local grape cultivation and the winemaking process as you move through the rows. Dinner unfolds in courses. Five appetizers arrive with the first two wines: broad bean purée, focaccia from Bari, seasonal vegetables. Then handmade orecchiette, made a few hours before service, paired with a wine chosen to match it. The bombette—local meat cooked on the stove in the traditional way—comes next with a third wine. Dessert and rosoli (a local liqueur) close the meal. Each wine is from the vineyard's own production, and the tasting moves through white, rosé and red as the courses progress.
