The experience

Start with Prosecco in one of Florence's liveliest squares, then cross the Arno into Oltrarno: the half of the city locals never left. Your guide takes you into a centuries-old wine window, a fiaschetteria that's poured wine for the neighborhood's restaurants since the 1950s, and a family-run cheese shop run by a man who has crowned himself King of Cheese and makes his case with total conviction. You'll taste pecorino and parmigiano there, charcuterie boards in a XII-century cellar, and bruschetta with stracciatella alongside the history of how these wine windows were built for plague-era sales and reopened in recent years.

The stops are built around what you eat and drink, not around what you see.
