The experience
You arrive at Villa Nina in Amalfi and start in the garden, where the chef walks you through what grows seasonally and why it matters to the food you'll cook. You pick tomatoes, zucchini, peppers and eggplants straight from the plants: the same ones going into lunch. This isn't a lecture. It's the premise that makes the rest of the class work, because you'll taste the difference when you're shaping ravioli filled with fresh buffalo ricotta or cutting San Marzano tomatoes for the sauce.
The kitchen is set up outdoors on a terrace overlooking the coast. You wash your hands and begin with the dough: rolling, shaping and filling ravioli, then moving to scialatielli, the thin ribbon pasta that takes practice to get right. The chef demonstrates, then you do it, your hands learning the pressure and the rhythm. While the dough rests in the refrigerator, you prepare the sauce: the cherry tomatoes you picked minutes ago, reduced to concentrate the flavor. Then you move to emulsifying the ingredients for Amalfi lemon ice cream, which requires precision and timing. By the time your ravioli hits the water, you've made three dishes from the ground up.
You eat what you've cooked: bruschetta made with homemade bread and garden tomatoes, ravioli and scialatielli with your own sauce, and the lemon ice cream you churned. Local red or white wine comes with the meal. If you're traveling with children under 21, they get non-alcoholic drinks. Coffee or tea closes the class. Private transportation to and from your hotel is included, so you don't arrange the logistics.
