You make the pasta and the dessert yourself, not just watch.

A hands-on cooking class at a farmhouse in Salento where you prepare three traditional regional dishes (a starter, orecchiette pasta with tomato sauce and cacioricotta, and local tiramisù) under the guidance of host Emilio, followed by dinner in an olive tree-fringed setting. The class runs three hours and includes wine for adults.

The experience

The farmhouse sits in the middle of olive groves, and the day starts with a walk through the property and the oil mill where Emilio makes the oil you'll cook with. After an appetizer, you move into the kitchen to make three dishes from the region: you'll shape homemade focaccia, roll out orecchiette by hand and dress it with tomato sauce and cacioricotta cheese, then finish with a Salento tiramisù. The recipes are traditional to the area, and Emilio teaches as you work.

Once you've cooked, you sit down to eat what you made. Wine is included for anyone over 18. If you want to stay longer, there's a pool on the grounds where you can swim afterward, with a Salento aperitif to follow. The whole experience runs about three hours, and Emilio leads the class in English or Italian.
