The experience
You start at the vibrant local market and traditional food shops with your host, a Cesarina: one of Italy's network of home cooks who open their kitchens to travelers. She shows you what to buy for the day's recipes, the cuts and the seasonal picks that matter. Then you move to her home, where you have your own workstation with utensils and everything measured out.
The three dishes you'll make are drawn from Aosta cuisine: pasta like tortelli with wild meat, tagliatelle or gnocchi; a seasonal starter; and a typical dessert such as Mont Blanc, tiramisù or regional biscuits. Your host reveals the tricks as you work: how the dough comes together, why the timing matters, what makes the filling sing. You're not watching a demonstration. You're doing the cooking, and she's there to guide you through it.
When everything is ready, you sit down to taste what you've made, accompanied by a selection of local red and white wines. Water and coffee are included. The whole experience runs about four and a half hours, and the class is private. Just you and your host, or your group and your host if you're traveling together.
